Sandhill Sauvignon Blanc 2020

FLAVOUR PROFILE
• Clear and bright with a fresh, clean aroma of yellow apple, peach, golden kiwi, lemongrass, pink grapefruit and site-specific minerality.
• This light-bodied Sauvignon Blanc has a refreshing mouthfeel and flavours of white currant, grapefruit, gooseberry, green apple and a touch of peach.
• Notes of white currant, grapefruit, gooseberry and lemon-scented herbs sing on the finish.
• A fabulous spring and summer sipper. Or pair with pan-fried fish filets with fresh herbs; herbed pasta salad; asparagus salads; cool refreshing gazpacho; basil pesto on pasta or chicken; halibut with a corn, cucumber and tomato relish; goat cheese appetizers; spinach quiche; spring pea risotto.

GROWING CONDITIONS
The months of May and June experienced cool, wet conditions which slowed growth, disrupting some spring bud development thereby reducing crop load in the vineyards. Summer began with a bang and from early July through August there was consistent sunshine, high heat units and timely rains. A very warm September provided the perfect conditions for any lagging maturity resulting from the slow spring start. The great weather continued into October, extending hang time for some varietals that needed that extra push. Overall, it was a great growing season with healthy canopies, the ability for the vines to respond to the weather, and fewer periods of shut down due to extreme heat, therefore allowing grape maturity to continue on an even and steady rate with optimum conditions. Wine Making

• The Sauvignon Blanc grapes were picked from Sandhill Estate and Hidden Terrace vineyards in the cool of the early morning hours.
• Within moments of arriving at the winery, the fruit was pressed directly to stainless steel tanks where it was cold settled before fermentation.
• Special selected yeast was used to enhance varietal characteristics.
• 100% stainless steel fermentation and aging.
