Deep garnet in colour with a seductive bouquet of dark plum, blackberry, sweet oak, cedar and spice box.
This full-bodied wine has silky tannins, great structure and moderate acidity.
Concentrated and mouth-filling, ripe fruit flavours of baked plum and blueberry are accented by notes of spice and vanilla.
The smooth, lingering finish shows wonderful notes of dark chocolate, charred wood, cassis, plum and sweet spice.
Amazing cold winter’s evening sipping wine while sitting fireside: or pairs well with rich red meat casseroles and stews; wild game cuisine; pot roast with roasted root vegetables; prime rib of beef with garlic mashed potatoes; marinated leg of lamb; beef bourguignon; three to five year old Canadian cheddar or other hard aged cheeses.

The southern Okanagan Valley experienced back-to-back seasons of extreme heat units in 2014 and 2015, which saw 1702 and 1764 Growing Degree Days, respectively. The 2015 vintage saw the highest recorded GDD since the record-breaking 1998 vintage at 1778 GDD. The long, warm, sunny and dry growing period provided a good size crop of high quality fruit. Look for white wines with pure fruit expression and big bold reds with soft tannins and ripe, rich fruit. 2015 is another epic vintage for the history books.

Wine Making Hand-harvested from the Phantom Creek Vineyard. All varietals were co-fermented in small open top fermenters using special yeast. Aged in new American and French oak barrels for 22 months. The top two barrels (one American and one French) that exhibited the greatest complexity, structure, texture, fruit concentration and ageability were selected for this third vintage of the very limited Soon series of wines.
